Baked Plantain Recipes: Baked Plantain on the Shell






Baked Plantain On The Shell

4 lg ripe plantains
1/2 c brown sugar
3/4 t cinnamon
1/4 c butter (or margarine),melted

1. Preheat oven to 350 degrees.
2. Wash plantains and cut in half lengthwise. Do not peel.
3. Arrange in a shallow baking dish with cut sides facing up.
4. In a small bowl, combine brown sugar, cinnamon, and melted butter and stir well.
5. Top plantains with brown sugar mixture.
6. Cover pan and bake for 35 minutes or until plantains are soft.

Easy African Dessert Recipes: African Banana Peanut Cake






African Banana Peanut Cake

2 c all-purpose flour
2 t baking powder
1/4 t salt
1/4 t baking soda
2/3 c butter (or margarine)-softened
3/4 c sugar
2 eggs
4 lg very ripe bananas--peeled and mashed,about 2- cups
1 c salted peanuts,coarsely-chopped,divided

Combine flour, baking powder, salt and baking soda. Cream softened butter and sugar until light and fluffy; beat in eggs. Add dry ingredients alternately with mashed bananas just until combined; stir in 1/2 cup chopped peanuts. Scrape butter into well greased 9" 5" loaf pan; sprinkle top evenly with remaining chopped peanuts.

Bake in 350 degree F. oven 60 to 65 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes; turn out of pan and cool completely. Wrap in plastic wrap or foil. Cake is best if served next day.

How to Make French Dressing






Home Made French Dressing

1 c oil
1 c vinegar
1 t dry mustard
1 sm onion,chopped finely
1/2 c ketchup
1/2 c sugar
1 t salt (optional)

Mix all together in a glass quart bottle that has a tight fitting lid. Store in the fridge. Keeps for weeks and weeks!!

Simple Potato Recipes: Herb Roasted New Potatoes








Herb Roasted New Potatoes

4 Servings

20 sm red potatoes (or new-potatoes)
1/2 c oil,clarified butter, bacon fat (or animal fat)
1 T rosemary,basil or oregano
Salt
Black pepper

Heat oven to 400F. Scrub potatoes clean, remove any eyes and cut in
half. Place potatoes in a baking dish and pour oil or melted fat over
them, toss to coat. Bake for 15 minutes, turn, bake for 10 minutes,
sprinkle with herb of your choice, toss to coat and bake for another 10
minutes. Test with a fork to make sure it glides through. Season with
salt and pepper to your taste.

Spicy Chicken Wing Recipe: Firey Hot Chicken Wings






FIREY HOT CHICKEN WINGS
2 1/2 pounds Chicken wings -- separated
5 tablespoons Louisiana hot sauce
2 tablespoons Vegetable oil
1 tablespoon White vinegar
1/4 teaspoon Garlic powder

These screaming hot chicken wings are easy to prepare, and can be made hot, hotter and scorching hot by adding more hot sauce. Enjoy these wings with celery sticks and Cool Cucumber Dip to help extinguish any "fires."

NOTE:
The recipe actually calls for 3 to 5 Tbsp of Louisiana hot sauce. Use your own discretion. Set oven to "broil" and place rack 6" from the element. In a medium sized mixing bowl combine hot sauce, oil, vinegar and garlic
powder. Place chicken wings on a broiling pan. Using a pastry brush, coat the wings with the sauce mixture. Broil the wings for 7 minutes on one side before turning them over and broiling for another 7 minutes. You can
also cook these wings over the BBQ. Cook wings for the same amount of time over medium high heat. Be sure to preheat the BBQ and brush the
grill with oil to prevent sticking. Serves 2 - 4

Easy Chocolate Candy Recipes: Coconut Fudge Balls








COCONUT FUDGE BALLS

2/3 c. evaporated milk
2 1/2 c. powdered sugar
12 oz. semi sweet chocolate bits
1 c. chopped nuts
7 oz. or more coconut

Mix chocolate bits and milk and microwave until melted (about 3 minutes).
Stir in sugar, and nuts. Chill 1/2 hour. Roll into balls. Color coconut and roll balls in the coconut.
For even more fun insert a lollipop stick into each of the balls then return to the fridge to chill for another 1/2 hr.
Serve and Enjoy!

Spicy Chicken Wing Recipe: Cajun Chicken Wings






CAJUN CHICKEN WINGS

2 1/2 pounds Chicken wings -- separated an
3/4 cup Plain yogurt
2/3 cup Louisiana hot sauce.
2 teaspoons Garlic powder
1 cup Flour
1/2 cup Cajun seasoning
Oil -- for frying

In a bowl, mix together yogurt, hot sauce and garlic. Add chicken and marinate overnight in the refrigerator. The following day, mix together flour and cajun seasonings in a bowl. Remove chicken from the marinade
and coat evenly in flour mixture. In a wok or deep fryer, heat oil to 370F. This can be achieved by heating over medium high heat. Use enough oil to cover 4 to 5 chicken wings at a time. Deep fry wings for approximately 8 minutes. Drain on paper towel. Serves 2 to 4
