My girls love instant oatmeal with fruit in it however I don't like the junk that is in the cheaper versions and the organic versions are just too expensive.
Last week I decided to make my daughter a homemade version.
I started with 1 red apple that I cored and diced. I sauteed the apple in a skillet that had been sprayed with canola oil.
While I did this I cooked 1/4 cup dry quick outs per the label on the container.
When the oats were cooked I combined them with the sauteed apples, a tsp of cinnamon, a TBS of raw honey and a splash of almond milk.
This was lightly sweetened and my daughter loved it. The bowl was much heartier that what comes in one of those little instant packages. We will be doing more of this in the future using other fill-ins.

1 3/4 cup of King Arthur White Whole Wheat
1 tablespoon baking powder
1/4 teaspoon Pumpkin Pie Spice
2 Egg yolks
1 3/4 cups Silk Vanilla Almond Milk
1/2 cup canola oil or coconut oil (I have made it both ways)
2 Egg whites
In a large mixing bowl stir together flour, baking powder and salt. Next add in egg yolks, almond milk, pumpkin pie spice and oil. I used my hand mixer to blend this together. In a separate bowl whip egg white to form a stiff peak. Gently fold egg whites into mixture leaving a few whisps of egg white visible. I made mine in my waffle maker. I use a 1/4 cup measuring cup and let them cook in the waffle maker until the steam starts to dissipate. I know that is not super scientific but that is what works with my waffle maker.
One batch made almost 14. As you can see the last two on the top are missing their corners.
