Easy Homemade Waffles: No Dairy!

1 3/4 cup of King Arthur White Whole Wheat
1 tablespoon baking powder
Pinch salt
1/4 teaspoon Pumpkin Pie Spice
2 Egg yolks
1 3/4 cups Silk Vanilla Almond Milk
1/2 cup canola oil or coconut oil (I have made it both ways)
2 Egg whites

In a large mixing bowl stir together flour, baking powder and salt. Next add in egg yolks, almond milk, pumpkin pie spice and oil. I used my hand mixer to blend this together. In a separate bowl whip egg white to form a stiff peak. Gently fold egg whites into mixture leaving a few whisps of egg white visible. I made mine in my waffle maker. I use a 1/4 cup measuring cup and let them cook in the waffle maker until the steam starts to dissipate. I know that is not super scientific but that is what works with my waffle maker.

 One batch made almost 14. As you can see the last two on the top are missing their corners.
